The Story
Doña Esperanza Cruz learned mole negro from her grandmother at age 7, standing on a wooden stool to reach the clay comal. Today at 62, she runs a small market stall in Etla market, and her mole paste is the worst-kept secret in Oaxaca. Ask any local where to find the real thing — they'll point you to her blue plastic tarp.
