The Story
Hassan Benali is the fifth generation of his family to run a spice stall in the Fes medina. His grandfather's handwritten recipe notebook, water-stained and faded, still guides every batch. The spices come from a network of farmers Hassan has known for decades — saffron from the Talaouine plateau, rosebuds from the Dades Valley, peppers from Agadir.
